By calling diversity in comedy "PC nonsense," Seinfeld is essentially saying that a comedy world packed with white men is no big deal. Perhaps. One could also argue that he's saying a comedy world packed with black men is no big deal. A comedy world packed with Asian women is no big deal. A comedy world packed with Hispanic people is no big deal. A comedy world packed with Arabic and/or Middle Eastern origin people is no big deal. A comedy world packed with Indian people is no big deal. A comedy world packed with Native Americans is no big deal. A comedy world packed with Pacific Islanders is no big deal. And I'm sure there are other more specific race categories I've forgotten.
Why are we concerned about the race of comedians? I laugh at what makes me laugh- I laugh at comedians who make me laugh- and I prefer those who keep their acts clean. I don't care what race or nationality they are, etc. I think all Jerry Seinfeld was saying is that we should quit looking for "diversity" in everything and quit freaking out if artificial racial quotas aren't met.
For example, just because there is 0.6% of Japanese population that's non-Asian doesn't meant Japan has some hidden agenda against other races- they just don't happen to tend to migrate to Japan to live.

So when it comes to comedy, let's welcome everyone to get out there and put forth their best effort- may the funniest person (man or woman) win.
I feel the same way when it comes to casting roles on TV shows and movies- unless a part is written specifically for a certain race (like say, Jim in a movie production of Mark Twain's "The Adventures of Huckleberry Finn") then let's just go with the most talented and not worry about the racial background and if we're representing enough races on TV or movies- because that racist stigma so quickly seems to follow behind if we don't.
It's not a matter of racism- it's discrimination. i.e. Discrimination of people's qualities and capabilities (not races) in hiring people for jobs- which is what we should have all the time.
The bottom line is- everyone is infinitely important and equal and valuable in God's eyes because we're all made in His image. I wish we could all learn to treat each other that way with love and respect and treat others the way we would want to be treated just as Jesus told us to do. Of course, we need His help for that.
