Why does Endora have respect for Darrin's wishes to not let anyone of his friends know that they're witches?

Probably because she knows it would have distrastrous consequences for the whole family - not out of any respect or loyalty she feels for him!
In one of the episodes (can't remember which one, but Tabitha is about three in it), either Sam or Endora grants his wish to let everyone know about the witchcraft in his family since he's tired of keeping the secret. (I think it is just in a dream, however.) The government splits up the family for national security reasons when they find out that Sam and Tabitha are witches. (That's all I can remember of this episode.) |

I think it was because she knew that was the smartest thing to do. Endora didn't like mortals to begin with (she thought they were greedy and materialistic) & could foresee the problems it would cause if they found out.
