This salad have a Mediterranean back ground and due to its very "crisp" taste it is eaten as a contrast to heavy hearty meals such as made with rice, pasta, pizza, bread. I make it all the time and it will keep in refrigerator for couple of days.
It only have three ingredients: 2 Cucumber, 2 Tomato and 1/2 Onion. Chop up the vegetables in small sizes. Add two ounces of Cider vinegar (or juice of two limes), two teaspoon of olive oil and a dash of salt, black pepper and mix well. Optional, but one can also add chopped fresh Parsley or Cilantro for added kick. Let it chill before serving ![]()

If I had only 3 ingredients to put a salad together, I would choose, Lovely Romaine Lettuce, Generous Chunks of Avacado and a Tasty Dressing.....love those avacados.....
If I had 4 to use, I'd love large bacon bits. |

Either fresh spinach or Green leaf lettuce. Tomato and cucumber
Also like avocado , croutons, hard boiled eggs, red onions, shredded carrots |

I don't think I knew of an avacado until I came to CA and didn't really get into them until in my 40's or so. A high portion of the world does NOT know about their existence. The Mexicans use a lot of "A
....YUM Some friends many yrs ago had a bearing tree in their backyard....probably brought to CA from Australia a long time ago.....A great healthy gift to have that tree. |
