I was watching an VERY episode of the "GG" when Rose said she was hired as a waitress but they never showed her working in a coffee shop and it was droped without explanation did I miss something ?

it was called "Job Hunting" it was in the first season

Rose seemingly lost her job at the Grief Center in the episode "Job Hunting" and at the end of the episode, revealed she was slinging hash at a diner. But then in later episodes, Rose is again working at the Grief Center, and later, after her pension fund is cut off, Rose fights age discrimination and gets a job as Enrique Mas' something or other. After that Rose gets a promotion of some sorts. Her diner job was never mentioned again after "Job Hunting."

Did they ever explain how Rose got back on at the Grief Center after she was let go?

Job Hunting was the second filmed installment of The Golden Girls, but the 24th to be aired... go figure. After that episode, the first flashback episode (where the girls recall how they met) was aired as the season finale. When Rose returned with the girls for the second season, the diner job was just forgotten about by the fans, and Rose was back at the Grief Center.

Wasn't Rose some sort of TV Production assistant at some point?

I also remember seeing her at a hospital with a dog...something about the dog cheering up an elderly patient.
