I thought the show could been more successful if they set the show in Chicago.

No way! L.A. was the perfect setting for Sanford and Son! How would they have been able to run a successful junk yard business in a city that has a really cold climate ( snow and wind) a lot of the year? L.A. with it's mostly sunny and warm/ mild climate is perfect for their business being they kept a lot of their merchandise and conducted business out side in the yard .
