Having not seen an episode in years, one that stands out to me is the episode when she went all pretentious to impress an upper-crust guy she was dating, only to tell him off at the end of the episode when she'd had enough.
I largely liked the character, but I did not like how they made Lisa a lot more confrontational and sassy in the later seasons. It didn't ring true to her character from the earlier years, including Good Morning Miss Bliss.

^^^ I remember when she wanted that guy to like her and so she took an interest in all that he was into. After telling him off, she is shown dancing with Screech.
