Does anybody have plans for Christmas Eve and Christmas Day? For our Christmas Day meal, we are going out for Chinese food instead of having a ham.

This evening, we will go down to my Cousin Matthew's new house in Athens, Alabama
for a holiday party. We will be bringing Sausage Balls, Shrimp with Cocktail sauce, a
Vegetable platter with Ranch Dip and Walnut Fudge.

We will go to my mother's house on Christmas Eve and on the way home we'll go through some sub-divisions and look at Christmas lights. On Christmas Day I will make a big breakfast and we'll open our gifts. We may go visit his sister if she feels like having company. She has COPD (she was a chain smoker since she was a teen) and she has trouble breathing.

One of my favorite things about Thanksgiving Turkey is what we do with the leftovers,
specifically Turkey Enchiladas. We mix chopped Turkey Meat with canned Chicken Cheese
Enchilada Soup, Sour Cream, Mango Habanero Salsa and Cheddar Cheese, put it into Flour
Tortillas(Gluten Free Tortillas for me), cover it with more of the sauce and more Cheddar
Cheese, bake until golden brown and top each serving with chopped Scallions and Tomatoes.

A glorious thing of beauty every time! And the leftovers the next day are even better!

By the way, this is what Sunday Dinner will be.

Well, our Christmas Eve Feast has come and gone and later today will be Breakfast with Oatmeal Raisin Pancakes, then opening our presents and later Christmas Dinner with Ham.
