On Newsradio I discovered a character named Nancy in the episode Sweeps Week and what I learned about her is that she was the ex-girlfriend of Dave and they broke up but remained friends until he moved to New York and got the job at the radio station. Did Nancy appear in other Newsradio episodes too?

Nope. That was her one and only. In fact, I don't think they even mention her again.
