For me the ultimate is The Carol Burnett Show. The Family, Mrs. Wiggins, and all the characters made this a wonderful show!

Does Saturday Night Live count as variety? If so, that one.

I have a Top-16 List for Variety/Sketch TV Shows...

-Big Chuck and Little John (Only seen in Cleveland)
-Chappelle's Show (I dunno if this is a variety show, but if it is it has a twist)!
-Monty Python (Same here)
-Ed Sullivan
-SNL
-Laugh-In (This may be the first show that is inspired by sketch comedy)
-Carol Burnett
-Smothers Brothers (It would be high, but they got cancelled suddenly)!
-Flip Wilson
-Wayne Brady Show (It was a summer replacement, but enjoyable)!
-Ray Stevens Show (Same scenario)!
-Dean Martin Show
-Your Show of Shows (The predecessor of SNL).
-You Can't Do That On Television (I dunno if this show counts either)
-In Living Color
-SCTV
