I've read that too. It may or may not be true that they did that as well. But according to the the associate producer of the show, Herb Browar, the "talking" was done this way:
"Ed wore a bridle and Les (Hilton, Ed's trainer) would run a very thin nylon fish line [through] the bridle and up under Ed's upper lip and then stand off about ten feet and when he wanted the horse to talk he would jerk that line and it would irritate Ed's upper lip and he would make those motions with his mouth."

I loved Mr Ed, I thought it was funny how he would only talk when Wilbur was alone with him.
I also loved the episode when Mr Ed was singing, that was a really funny episode. |
