Very well done and Archie shows some real sentiment for her in saying, "I'm not gonna holler at you no more"....(just after he fired her with, "GET OUTTA MY KITCHEN, LADY!! I DON'T WANT NO DRUNK!!).

Why was she not used more often?

That was her last episode.

It was not her last episode. 'Tough Love' aired on 3/15/81 and Anne Meara continued to appear many times as Veronica, including a sequel/anniversary episode called 'Relapse' on 3/14/82.

Why was she not used more often? You could say that about many ABP characters in seasons 3 and 4. In the case of Veronica, after the awful Relapse they were clearly out of ideas on how to develop her character beyond a (former) drunk cook that took barbs at Archie and had a loser family.
