Why was the role recast? I heard a rumor that the original Mrs. Carlson played by Sylvia Sidney hated the show and refused to ever appear again. Is that true???

Sylvia Sidney never understood the humor of the show and therefore didn't like it at all. And apparently she was difficult to work with and didn't get along with the rest of the cast. The producers didn't want to deal with that for the entire run of the series so after the pilot the recast the part. I think Carol Bruce was better in the role anyway!
