They decided to drop that character. His name was Coco. He was never refered to again, as if he never existed. He ended up on Chuck Cunningham's island of forgotten sitcom characters.

Coco (the cook) was written out of the show after the first episode because Sophia was a much stronger character and they didn't need him.

I found this on the golden Girls Central website. They have a page on their website called interesting facts... check it out........................

I'm glad they ditched them!! All the girls had great chemistry together, it would've messed with the dynamic of the cast!!
