I must be an idiot, because I can't find it on any of the four discs....what am I doing wrong????

It's on Disc 1. You go to Special Footage. Then, on the new menu that pops up it shows a couple features. There's also an arrow at the bottom. You hit the arrow, and it takes you to a second page of more Special Footage. One of them is, of course, Lucie Arnaz' interview.

It's the same thing for the other interview with Jimmy Garrett, but on disc 4.

It took me a while to figure it out myself.

The one fault of these discs is that the menu is not that user friendly. They remind me of The I love Lucy DVDs in that regard.

hit "Bonus", then "Special footage", then select "Let's Talk with Lucie"
