I don't remember very many ep's but of the ones I remember its when Mary Richards flies out. The moment with her and Mother Dexter was priceless!

Actually any ep with Mother Dexter is great

Mother Dexter's wedding is great also when Mother Dexter first appears and Phyllis and Bess move into that terrible apartment.
