I recently caught an episode that flashbacked to 1959 and it had a younger Sophia sitting behind a sewing machine talking to Dorothy.

Did Estelle appear more times in flashbacks or anything like that without the old make-up on?

Yeah, there are a few flashbacks like that in the series. There's that one, the story about Sophia being at a St. Valentine's Day Massacre, one in the Max Weinstock 2-parter, the Mother's Day ep. where Bea played Sophia's mother, and the ep. where Sophia tells the story of how she found out Dorothy was pregnant.

I think that covers all of them.

So far I found three episodes of Estelle Getty playing a young "Sophia"

Season #2
"A Piece of Cake" aired 5/9/1987

Season #3
"One For the Money" aired 9/26/1987
"Mother's Day" aired 5/7/1988

I believe there may only be 4 episodes. An Actreess named Lynnie Greene played the young "Dorothy" between the ages of 20-30.
