why did his voice mostly sound like his nose was stopped up or that he had a bad cold in most of the later episodes? he doesn't speak like that now.

I shouldn't assume either, but he did do drugs and so I assume cocaine was a part of that. Cocaine can cause damage to the sinuses and make you sound like you have a stuffed up nose. I also noticed how he did have that nasally sound.
