I think it was Cary Grant, who she saw at the Brown Derby before William Holden came in. She also saw Eve Arden before that, and it's implied she saw Walter Pidgeon before WH came in, also.

I think she meant which actor she seen that we (the audience) actually seen too. Ethel saw Eve Arden first, not Lucy.
