Because we see Carmen from different scenes and it is supposed to be like George looking back at his little girl growing up and moving on with her life.

Here is some info on the actress, don't know if you ever seen this before:

Masiela Lusha (born October 23, 1985) is an actress and writer. She was born in Tirana, Albania and her family moved to the United States when she was seven. At the age of twelve, Lusha published a book of her poetry written in both Albanian and English, "Inner Thoughts." She became an actress and played Carmen Lopez in the first five seasons of ABC's The George Lopez Show, and does the voice of Adrian in Adrian Butler from 2003 to the present. Her character on the show also writes poetry. She graduated from her high school at the age of 15. Lusha attended Glendale Community College (California) before transferring to UCLA where she is currently a student.

Irene: I have heard she was written out of the show because George wanted a real Latina, since she was Albanian. Also I did hear that her and George didn't get a long in her last season.

That makes no sense Pav simply because I cannot fathom George not having a say-so during the audition process. Also, that sounds rather racist if George were to say that and I have never seen nor heard George say anything remotely like that regarding race. If anything, I have heard him say he wishes there were more latin actors playing roles that are not normally geared towards hispanics. So, if he wants hispanics to play non-traditional hispanic roles, why would he then want only a hispanic to play his daughter?

I am curious to know as well. He should have just kept her on the show. I mean, that was the daughter.

Solomon, honestly, how do we see things differently that you? That was his daughter. She helped to complete the family. The show could have done without her... but I am glad that she was added to the show. I guess that a female youth was still needed. I will agree with you Sol that she was a nice looking addition.

I stated this info on another thread. The actress was going to further her education. Much like Lecy Goranson from ROSEANNE did, so did this actress. George did not want to stand in the way of that and she was written off the show. George stated this info at one of his concerts that we attended. In the audience were the some of the cast including the actess who plays George's niece.
