Some regular characters first appeared as mortals before establishing their well-known witch/warlock identities:

Alice Ghostley: (2-52 Maid to Order) Naomi (ironically the Tate's maid was named Esmeralda); (6-170 Samantha's Yoo-Hoo Maid) Esmeralda

Bernard Fox: (2-63 Disappearing Samantha) Osgood Wrightmeyer; (3-105 There's Gold in Them Thar Pills) Dr. Bombay

And then look what they did with Bernie Kopell:
