It was all that greasy, artery-clogging pork that Florida cooked for him. Chit'lins AND pork chops all in one meal?
That was a heart attack just waiting to happen.

Not only that, at the end of that hypertension episode, the doctor told him his cholesterol was a little high. That's just as bad as hypertension. They were so worried about hypertension, they overlooked cholesterol.

Plus they couldn't afford HEALTHY FOOD, Healthy Food is very expensive. Unhealthy Food is much cheaper and gets you to the next day

He probably wanted Florida to substitute cottage cheese in place of hamhocks or chitlins.
Besides, I don't think there was much pork chops and other meats in the diet since they always complained of high meat costs.
