Default Dinner problems!

I make dinner every night for two....I think that it is so hard to actually find good recipies that you have time for and are inexpensive and delicious. Also, I'm very particular...the only meat I eat is chicken and I hate tomatoes....and the list goes on and on...so yeah...tell me your story

Perhaps you could try cooking with tofu? I know, I know, but it's possible to make tofu taste pretty damn good with food.

I like red meat only once in a while - maybe once every month or so. If I eat it too much, I feel gross & heavy afterwards. No seafood for me, I had a bad experience with that in third grade (14 years ago). So, pretty much the only meat I eat these days is chicken. Other than that, I'm open to anything else.

It's nice to know you are looking for ideas for dinner for two...I'm still stuck at pizza for one. Seriously, do a web search for recipes at Food Network, and there have to be other sites that have good chicken recipes.

My mom makes a delicious chicken casserole dish. If you're interested I can PM you the recipe. It's chicken with rice, mayo, celery and onion pieces, with toasted bread crumbs on top. I'm getting hungry just typing this!! I'll ask her if she plans to make it again soon.

At least once a week, I microwave us each a frozen dinner. There are lot of good ones to pick from now and they're not very expensive. My husband & son don't seem to mind either. And its certianly fast & easy & tasty too.

A good website to try is Food Down Under. It has thousands of recipes from around the world as well as local recipes that people can submit. I am sure there are things there to weed through for foods you do eat. Check it out!

On the Pillsbury site, there is (or was) a feature actually called 'Cooking for Two' where you can set it up for them to send recipes via e-mail. I can't tell you if it's any good or not since I don't normally do the cooking. But you might want to check it out.

Also, have you seen those '4 ingredient' recipe cookbooks? The recipes are so fast and simple. Even if it makes multiple servings, you can make another meal, such as lunch for the next day--from leftovers.
