I heard there was an episode where Elyse sang an acoustic guitar version of "Beat It".

That I have to see. What's the episode's title and which season did it air?

I'm not sure which episode that is. There is an episode called Lady Sings The Blues. She sings folk songs in that episode. Beat It isn't a folk song though.

She sang in a few episodes. I'm not sure if it might say it in the episode guide.

I'm fairly certain that it is Lady Sings the Blues. Elyse is on stage singing and not getting the response that she would like from the crowd so she resorts to a few quick lines from Beat It. I think Beat It was mentioned earlier in the episodes by Mallory or Jennifer. I wouldn't say she actually sings the song...that whole part only lasts a few seconds...
