You'd be surprised how oddly some names are spelled these days. I know a kid and his name would normally be Aidan, but he spells it Aodhan. Then I know a girl named Katharyn, when that isn't the correct way to spell her name (it should be Catherine/Katherine/Kathryn). So for all I know, someone could actually spell Holly as Holley.

To be fair, though, I think that's done by the newsmedia, to differentiate them from innocent people with names like Mark Chapman, Lee Oswald, James Ray; etc. I don't think these people walk around before their infamous crimes known by their first and middle names.
