I thought there was only one theme song for the entire run of the show.

I meant opening credits. I heard there were different ones for every season...even seasons 2 & 3 were slightly different

The theme song changed the same, but the way "One Day at a Time" was written became more stylish. Also, from 1979-1982, the opening credits included boxes opening for each performer, freeze-framing on the boxes (about 3 for each of them, all on screen at the same time) right before their names were shown.

In fall 1979, after Julie got married, the credits went BF, MP, PH as Schneider, Michael Lembeck, Valerie Bertinelli as Barbara. By the end of that season (spring 1980), MP had been fired, and Lembeck disappeared with her. The credits for the remainder of that season went BF, PH as Schneider, "AND" VB as Barbara. That's when she got the "AND" billing that she kept until the end of the series.

80-81 had BF, PH as Schneider, Ron Rifkin, Glenn Scarpelli, and VB as Barbara.

81-82 had BF, PH as Schneider, Glenn Scarpelli, and VB as Barbara. MP made guest appearances, but she wasn't in the credits again until fall 1982.

82-83 had BF, PH as Schneider, Howard Hesseman, Shelly Fabares, Glenn Scarpelli, Mackenzie Phillips (she lost her primo billing from the early seasons), Michael Lembeck, Nanette Fabray, Boyd Gaines, and VB as Barbara. At the end of this season, MP and VB bought a house together with their respective spouses, in anticipation that the two could continue the series when BF left the show, which they knew was coming.

Scarpelli was gone by the beginning of the last season, 83-84, and Mackenzie Phillips was gone by the end of December of that year. This time, her husband on the show, Lembeck, stayed. He basically got a "Dear John" letter from her, and they even had an episode where he and Barbara kissed, but Barbara decided to stick with her husband Mark. CBS wanted to keep the show going when BF decided to leave, and planned to make VB the star, keeping the title ODAAT. They thought she and Lembeck had better chemistry, so Gaines was going to be ditched. But Bertinelli decided she'd had enough, and wanted to move on. So CBS decided to end it. The last episode was a proposed spinoff that never materialized with Schneider, but that was never going to retain the ODAAT name had it been picked up. (It was really bad, about him going back home to see his family in the circus. Just awful. Mercifully, it wasn't bought by CBS).
