They either refer to Superman in every ep or in Jerry's apartment there is a little Superman statue on his shelf that can be seen.

Jerry Seinfeld, himself, was a very eager fan of the SUPERMAN series, as mentioned in Notes About Nothing on the DVDs, several times. So, in some episodes, mentions were made of the superhero or ones like him.

I don't think it is true, mainly in the early episodes. If you check season 2 "the apartment" there is no reference to superman. Even in the notes about nothing there is one episode I think it is the stock tip it says this is the first reference to superman. I think it is a nice rumor but not true. You can read the script for the apartment here and tell me if you see a reference. And Jerry wearing blue or red don't count.
