Is there a reason that they had John Amos' character, James Evans, die at the end of the show? I mean usually they do that when the real life person (actor/actress) dies, but he's still alive.

He didn't die at the end of the show, he died at the beginning of season 4. Amos was in a bitter feud with the producers and they fired him. They killed him off, mainly because I think Norman Lear wanted to make sure he never came back. Lear never wanted a father figure in the show.
