In season two, Ted dates Chuckles' daughter, Betty Bowerchuck (and I'm assuming that's her maiden name and that Chuckles was not her step-father or that she was born out of wedlock). In the sixth-season episode in which Chuckles is killed, Lou tells Murray that Chuckles' first name was George. So, ignoring the possible inconsistencies from one season to the next, I'd assume his name was George Bowerchuck.
