I'll say The Waltons. I'd say Head of the Class, except I never watched it that much--although it did star Howard Hesseman aka Dr. Johnny Fever.

You can't forget I Love Lucy's theme song. That's a TV classic! Another very good instrumental theme song is The Dick Van Dyke Show's.
