Just curious to know if anyone watched Esther and John in the other show Maude.

I did, that's why I say that Good Times was a spin off of Maude.

Florida's name remained Florida. John Amos' character was probably changed because it sounded better, producers usually tweak their shows a bit for the good. As to the question of the shows setting, it was never explained. The link below suggests that Good Times is still referred to as a spin off of a spin off.

Lets just call it a loose spin-off.
But it was definitely DYNOMITE!

One of the best theme songs of the era.
(actually Maude had a pretty kick-ass song too.)

Most spin-offs are "loose" because the writers have new ideas for the characters as they branch off into their own domain. A lot of spin-offs have had some inconsistencies from their parent show. For that matter, many episodes in a series have had inconsistencies down the line. The bottom line answer to why inconsistencies exist in any work of fiction is, "Because that's the way the writers decided to do it."

Well since you want to call GT a spinoff, it's the only spinoff in sitcom history that had the setting changed without explanation and a name change of a character without explanation. So that sounds like a NEW SHOW to me, not a spinoff.
