I think they wanted Mr. Angelino to be a shady restaurant owner with questionable business practices. There are sketchy bosses who pay employees under the table. They like to hire and fire people on a whim.
My mom once worked at a dental office where the dentist not only failed to take out taxes and federal withholdings to the IRS, he also denied that my mom had ever worked for him. My mom had to hire a tax attorney to make restitution payments to the IRS. I also think the episode represents how uninformed the writers are/were in regards to restaurants and culinary arts. At a minimum, a top restaurant would need 2 if not 3 chefs to operate 6 days a week. I think the writers relied on their limited experience (maybe the TV industry is used to pulling people off the street when doing anything on the set) of how restaurants operate. You can't hire anyone to serve the public any kind of food. |
