I remember that she was reluctant to become Sam's housekeeper, because she wasn't sure she'd be able to adjust to life on a farm. During the second season, Frances Bavier was cutting back her appearances, and they explained her absence in some episodes by saying that Bee was caring for her sister, who was ill. At the beginning of the third season, when she was gone for good, I don't believe they gave a specific reason for her absence. Sam said something like, "We sure do miss her." Maybe she was still at her sister's.
