Usually sitcoms use Laugh Tracks. And when they are filmed in front of a live studio audience, I believe the trees and rocks are stage props on the set; not real outdoors.

As for heights, from several books/magazines, I've seen both 5'9" and 5'10" for men. For women, 5'3".
I guess "average" can vary an inch or two. I suppose it would matter how many men and women in which the data was computed.
