Because episode #157, "The Last Chapter" actually conluded the the series succinctly, and was filmed at Desilu Studios entirely, and generally was a compilation of clips from previous episodes. Episode #158, "The Gunslinger", was filmed in part on a back lot, and at the studio where the wrap party was held. It was the last episode *filmed*, but not the last one aired. Right?

"The Last Chapter" is episode #157 of #158 because, although it was the last episode aired, the scenes for it were filmed after filming was complete for episode #156. Episode #158, "The Gunslinger", was filmed the next week as the last episode ever filmed.
