According to Joey, in an episode of "Joey" they did. He was asked how his friends in New York were doing and he said that they were all happily married. So we are led to believe that Ross and Rachel are happily married along with Chandler and Monica and Phoebe and Mike. I'm sure they even had more kids.
A few years ago, Jennifer Aniston was asked if Ross and Rachel were still together and she said that they were still 100% together and had more kids. So in TV land, Ross and Rachel are still together, happily married with their kids. There is no need to assume anything else. :)
