Waffles and real maple syrup with butter. But, alas, I’m just mouthing off. All the foods I’ve listed recently are pretty much “off-limits” to me as a (mild) diabetic. Pizza, bagels, potatoes, and especially regular syrup—all make my blood sugar soar.

But, when I’m real jones-ing for something pancake like-I make it with almond & soy flour, sugar free syrup and light butter. And it’s actually pretty good - maybe 80% as the real deal.

I appreciate your sentiment. Luckily, I’m in an early stage, but It only stays that way IF I WATCH WHAT I EAT, and I’ve found some good substitutes for many “off limits” foods. And for those I can’t I eat 1/4 portions.

A good friend of mine who I've known since childhood also has diabetes as well, and she really has to watch what she eats.

What helps is being committed to watching what you eat, and always being on the lookout for GOOD substitutes. Quest Products makes really good low-carb cookies....that only raise my blood sugar a small amount.

Have you ever tried the Reese's peanut butter eggs they have around Easter. They are softer and taste more peanut buttery than the regular ones. They are so good!
