it was because Liz thought it was so fun to play Serena, because she was so different from Samantha and she didn't want the audience to know she played both roles.

...Liz really didn't WANT credit for "portaying" Serena, beginning with that January 1966 episode, "And The There Were Three". And she still didn't when Serena began to appear more often (after 1968). So, that's when she hit upon the idea of the "Pandora Spocks" credit. That "answered" the viewers' question, "WHAT IS THE NAME OF THE ACTRESS WHO PLAYS SERENA?".
