I'd like to see Blossom season 3 and Ghostwriter season 2. Unfortunately Shout Factory has said neither one is going to happen.

I would love it if the following complete series were released on Blu-ray:

The Shield
The West Wing
The Wonder Years (that would be expensive: in addition to the obvious music issues, there's also remastering. The show was shot on film, but edited on video. They'd need to locate all the original film elements.)
