Like I said initially - it doesn't happen often, and I've only had to resort to the tactic a *couple* of times.

Didn't suggest it happens every time I've went out - not by a long shot - but it has happened on a *few* occasions (though relative to the amount I "eat out", it's not a remotely high percentage)

Hmm, okay I get it. It's stupid and no wonder people can get so lazy (we have way too many lazy servers on our waitstaff) It's common sense to want to promote the bigger/more expensive things, because the bigger the bill, the bigger the tip. If someone really wants to make less tips, then they really shouldn't be serving and let people who know how to work it do it.

That's very true. Sometimes I wonder why some people are even in the business. I still never heard about the food in mouth theory.

I tended bar at a restaurant. The computer would average out the amount that each customer spent. The waitstaff would be held accountable if they had a consistently low average. It weeded out the lazy ones real fast. If they always had a low average, it proved that they weren't pushing the appetizers, pricey wine and drinks, and desserts. I'll say it again, there's no restaurant owner that would train its waitstaff to ignore their customers, unless they want to make less money.
