I think it is comical to call Dick Sargent more harsh, angry or threatening then York was when in reality it is obvious that the opposite was the case, it was York who was Hysterically screaming, yelling, pounding the table and much more angry and threatening then Dick Sargent was as Darrin, DS was very mild, laid back and almost mellow compared to York, much more relaxed towards Samantha and even in respect to her using witchcraft, he was still against it but he didn't freak out the way York had as Darrin.
This made perfect sense as they played the part at different points of the marriage whose dynamic would change over time as would Darrin's reaction to things even if the core of who he was did not.
I think York was more romantic and exciting as Darrin but that Sargent was warmer & even more loving as Darrin.
I think Sandra gets a bad rap, she was simply more adversarial and aggressive in attempting to find out what was what and then getting Samantha.
In many respects from a characterization perspective it was more effective i feel.
As far as Serena goes i think high camp and over the top is a better description then cartoonish, i do not think her character became more harsh at all, if anything at times it was more sweet and nice almost like the flower child mentality of the era.
