yes, it's in black-and-white, because the first 3 seasons were filmed that way; as were most TV shows.
And, yes, they do have scenes that are edited out in sydnication. For instance; in sydnication; at the beggining; after they show the credits Jed points to something and they all look over-but you don't see what he's pointing a It was a billboard advertising Kelloggs corn flakes. (Kelloggs and THE AMERICAN TOBBACO COMPANY were the shows sponsors)
And they show the pilot episode INTACT
And they show a lot of commercialls that the cast did! (a generous HALF-HOUR of them )

(back then, cast members of TV shows had to do commercials for the shows sponsor or sponsors.)
