Generally speaking, I'd have to say that dramas lend themselves to this condition much more than sitcoms. While my fanatical tastes run more toward comedies (even very silly comedies) there are some short lived dramas I do miss.
My wife and I used to enjoy a brief NBC series called Mr. Sterling. I imagine that if I'd kept any tapes from that show, I'd probably feel a little sad while watching them for pretty much the same reasons you listed.
One sitcom that sort of fits the mold for me is the live action series based on The Tick comic book. There was never any plot resolution or extreme character development to look forward to here. I simply regret that there were only nine episodes filmed.
As for the "lost", short lived series that's been driving me nuts for over a year now, Mr. Terrific (1967), not at all. I've got two episodes and some stray footage. As sappy as it is, I watch them over and over, and the one thing that would really make me happy would be to get all 17 eps. I'd watch them immediately and interminably. No regrets.
