My theory on the reason why we never saw derek is because at the time I highly doubt that they could have found an Actor that was that much more good looking than Ted.

thats what i thought too. another reason was probabaly just because it was funnier that you never saw him, you just heard him, like what they did with Vera

I didn't think it was funny that they didn't show him, because it wasnt a joke. It was however HILARIOUS that they never showed Vera (or Maris on Frasier).

i thought it was funny because they said he was so good looking and he had a great singing voice and he could speak Spanish and you could hear him, but never see him

Actually though, by NOT showing Derek, the audience can only assume his superiority to Sam, in ways only Sam can understand. In a way, it is kinda like Vera. The way Norm would joke about her, I could only assume she was not that attractive, and mainly from aging, because Norm has implied to have had a thing for her in high school. If they showed her, and she was beautiful, or even remotely good looking, it would change all the jokes about her. By not showing Derek, we have no reason to believe that he could possibly be inferior to Sam,
