Most of the episodes from the first five seasons are gems. The majority of those episodes are simple and understated, with the occasional honest-to-goodness crisis ("The Burn-Out", where the house catches on fire, or "The Easter Story" where Olivia contracts polio) thrown in. Later on in the series, the writers started running out of story ideas, and upped the melodrama (Mary Ellen gets hooked on painkillers; Olivia goes through menopause; faux John-Boy is injured in the war; presumed-dead Curt turns up alive).
I particularly like the episode in the first season that introduces Rev. Fordwick. He is staying with the family in preparation for a revival meeting, and John is not pleased with his fire-and-brimstone speeches to the children, placing him at odds with Olivia. I also like "The Cloudburst", where John-Boy unwittingly sells the land that Grandpa gave him to a strip-mining firm, in order to raise money for his newspaper. That episode has a bittersweet ending that is refreshingly realistic.

I like the first Thanksgiving episode in which John Boy gets hurt and ends up in the hospital.
Also the one where Elizabeth turns 13 and a poltergeist appears in the house.
