I watched this episode last night on N@N and have two questions. Why was the Henry Jefferson character taken off and was this the first appearance of the George Jefferson on All in The Family?

Well the George character was definitely toned down as each year went on. Especially when he came back to visit the Bunkers in 1978. He was much nicer. The evil George was Gone. It would have been nice for Mel Stewart to return for guest appearances, though, and he never appeared on the Jeffersons when they "moved on up" to their own series. Henry was only mentioned on the Jeffersons once, when his never before mentioned son came to visit George and Louise (played by Gary Coleman!-pre Diffrent Strokes).
