Does anyone else not like the way the settings changed after the early seasons?

I loved the pizzeria that the father owned. Why would he change his entire business model to southern food?

They lost the "inner city" quality that I think was a major element that made the show unique.

You only scratched the surface. In Milwaukee they were bottle cappers that shared a basement apartment with only one window. They were always humble yet dreaming big. In LA, they had a luxury 2 story apartment and barely worked. They wore designer clothes too. Its what the 1980s did to Threes Company too.
