I think Peter became a bit more antagonistic and maybe "smart-assed" in the final season, seems he liked giving Bobby a hard time to a large extent, whereas earlier he was always big hearted and seemed to look out for his younger siblings *Bobby and Cindy*

I would agree. However they all changed. The entire show changed. On the Real Brady Bros podcast they were talking how things changed every season after the first season. The first season was about the difficulties of a blended family. Season two changed and it kept changing. By season 5 its was almost a different show than season 1.
