I almost can't choose, because I like them all, but I guess I like Spock the most. I like it when a landing party calls back to the Enterprise, and the first thing you hear is this strong, competent, but emotionless "Spock here."

I only really like Star Trek Deep Space 9 and my favorite on that is Quark. :D
