I've developed an episode program for newcomers to Star Trek, a primer of 30+ episodes and movies from before the series was rebooted in 2009 (and before the plethora of new shows starting in 2017 with Discovery). These will give you a sense of the flavor of each series, a basic understanding of the universe, and a good introduction to a lot of the major elements of the lore, without giving away too many big developments and plot points, and without showing you all the best episodes right away. And there's a diverse mix of serious and comedic, heavy and light-hearted episodes, so hopefully it'll be a good time even if you don't venture any farther. You should be able to decide whether Star Trek on the whole is something you want to keep exploring, and which series might be more your speed if you choose just to watch one, front to back.
