The very First reason I got off breads over 12 years ago was for the gluten issue, I worked with gluten free breads but did not like them and they were too heavy ... so I gave up breads all together.
My daughter who deals with ligament damage in feet and it's gone to pain issues in knees, is FINALLY taking the gluten issue serious....she is off her surdough bread and only eating gluten free breads...for starters.
She's feeling the best she's felt in some time and is believing it's the eli9mination of gluten.
There is massive info on this issue and here is just one link from Cleveland Clinic. Check the area listing side effects that are possible.
